Happy Birthday To You!
Happy Birthday To Yoou!
Happy Birthday Dear Bloggy . . .
Happy Birthday To You!

I am so, so happily shocked that I have blogged for a whole year. I have always been very bad about keeping journals . . . and suspected it would be the same with blogging. I would love the first six months. The new adventure, the naming and designing . . . but was sure it would become rather boring. Not. I love blogging! I'm not the most dedicated blogger . . . especially since school started. I never blog if I start to pressure myself into thinking "I haven't blogged in a week . . I have to blog". No no. Blogging is supposed to be happy and relaxful ~ sharing your happy moments, discoveries, thoughts and feelings.

!! Hugs !! To all of my readers! Thank you for making this so fun. I have met so many amazing people through blogging . . . and looking forward to meeting more amazing people. Ya'll are awesome!

Scott & Rachel

Yesterday . . .

My oldest sissy, Rachel got married . . .

It was so, so, SO beautiful. Very simple, very small . . . to the point.
Aside from the loverly bride and groom, it was only their parents, siblings, nieces & nephews.

The entire family loves and highly approves of our new family member! There couldn't be someone more perfect for our RayRay . . .

It makes us happy to see Rachel so happy . . .

It was an honor to witness their Happily Ever After . . .

Sara Turns 21

My sissy Sara, turned 21 yesterday. Yay! *confetti* She spent most of the day on a top secret field trip with the Master Gardeners. A once in a lifetime top secret field trip - how lovely that it should land our her birthday.

Decorated and cooked while she was away . See Bebe, < I love how she sneaks in random photos. So when Sarie got home from her top secret field trip - we ate Lasagna, drank yummy sodas, unwrapped presents and received kisses from all three doggies . . . because they are just the bestest partiers evVa. Then we all collapsed on the sofa and started watching Little Dorrit and ate left over Cheese Danishes. Oo! Speaking of Cheese Danishes . . . I am in love with them. I've been wanting to make some for a long time. And braved it for Sara's birthday breakfast. YUMMY! I want to play with different flavors now.

Cheese Danish Recipe
From Ina Garten @ Foodnetwork

Ingredients
* 8 ounces cream cheese, at room temperature
* 1/3 cup sugar
* 2 extra-large egg yolks, at room temperature
* 2 tablespoons ricotta cheese
* 1 teaspoon pure vanilla extract
* 1/4 teaspoon kosher salt
* 1 tablespoon grated lemon zest (2 lemons)
* 2 sheets (1 box) frozen puff pastry, defrosted
* 1 egg beaten with 1 tablespoon water, for egg wash

Directions
Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.

Place the cream cheese and sugar in the bowl of an electric mixer fitted with a paddle attachment and cream them together on low speed until smooth. With the mixer still on low, add the egg yolks, ricotta, vanilla, salt, and lemon zest and mix until just combined. Don't whip!

Unfold 1 sheet of puff pastry onto a lightly floured board and roll it slightly with a floured rolling pin until it's a 10 by 10-inch square. Cut the sheet into quarters with a sharp knife. Place a heaping tablespoon of cheese filling into the middle of each of the 4 squares. Brush the border of each pastry with egg wash and fold 2 opposite corners to the center, brushing and overlapping the corners of each pastry so they firmly stick together. Brush the top of the pastries with egg wash. Place the pastries on the prepared sheet pan. Repeat with the second sheet of puff pastry and refrigerate the filled Danish for 15 minutes.

Bake the pastries for about 20 minutes, rotating the pan once during baking, until puffed and brown. Serve warm. ( And prepare to swooon )

Ida Rose and So Forth

Okay, so we all agreed not to foster for a while . . . at least until Sara and I had offically adjusted to having school again. But just so ya knows . . . it's practically impossible to leave puppies at the shelter. Especially during Parvo season ~ we've already learned our lesson there. She cocked her head when we left . . . and we were doomed. To home sweet home Ida Rose goes! She's such a doll . . . makes our hearts happy.

♥ We are loving that it is finally officially warm enough to walk to town again!! Ida Rose comes with us. She is our first dearie that can walk to town. Bebe gets too excited. Judie is our sleepy little heart patient . . . so it has been a treat!

♥ My sissy Rachel is getting married in only 13 days! Squee!♥

♥ I was a part of my first cat "rescue" yesterday . . . it was wonderful. Her family cried and cried . . . they were so happy to find their Kitten Anne! She had been missing for a week. And they love her dearly! This was the first time I was able to reunite an animal with their original owner. It was happy indeedie.

♥ Happy Mothers Day Weekend ! ♥

Spring Adoption Weekend

We were able to attend our first Adoptathon at Petsmart . . . it was amazing! None of the dogs had to go back to the shelter! None, none, none. They all found most wonderful homes and two found happy foster homes. To say the least ~ we are all on cloud nine. ;)

You can view some Happy Tail photos here. . . that is if Petfinder decides to be nice.

Even our Eliza found a home Sunday . . . Yay!! *sniff sniff* Yay!! We miss her like crazy. But feel so good about her new family. Not sure if there could be a better home for her! Aside from having her new Forever Parents, she will have two doggie playmates and a cat.

And they all lived Happily Ever After.
Huge thanks to all of the peoples who made this possible!
